Welcome to everyone coming by for Foodie Friday hosted by Gollum. 1 1/2 cups sugar
1/2 cup shortening
2 eggs well beaten
2 cups flour minus two tablespoons
1/4 tsp. salt
1 tsp. soda
1 cup buttermilk
1 tsp. vanilla
Make paste of 4 level tablespoons cocoa, 1 tsp. red food coloring, 2 tablespoons hot brewed coffee.
Cream sugar and shortening. Add eggs, flour and other dry ingredients. Add buttermilk, vanilla, and cocoa paste. Mix all ingredients well.
Bake 350 for approximately 24 minutes. Test in the middle with a toothpick. Be careful not to overcook.
Icing:
1 box powdered sugar
4 tablespoons cocoa
4 tablespoons hot brewed coffee
1 teaspoon vanilla
1 tsp. red food color
1 stick butter softened
Mix all ingredients well with mixer.
**Now let me tell you my secrets: I do not make a paste of the cocoa and coffee. I just put it in the bowl and mix well. Works fine. Usually use extra red food color.
You know how every family has certain things they eat? My husband really ONLY wants THIS cake. I make a killer carrot cake from my mother's recipe...he will eat one piece to be nice. That's it. We are taking off for a short visit with family this weekend. I will be by to visit you all when I get back.

I thought it was just red velvet cake until I got to the icing--the coffee is a different twist! Sounds good!
Yep, I was thinking "red velvet", too until I finished. Since I love red velvet, I'll bet I'll love this, too. Since hubby's from the red earth up there, I should make it for him! Hope you are safe from the fires they've been showing on tv. Have a safe and happy Easter.

I was thinking this sounded like Red Velvet Cake until I got to the coffee part and I think it has less red food coloring too. Either way it sounds delish and I must try it. Thanks for sharing the recipe and have a lovely Easter and safe trip.

Mmmmmmm, sounds like it is really good. I think I would like the carrot cake even better. I am a sucker for that cream cheese icing. I am going to have to give this red earth cake a try. I like anything sweet and coffee too. It has to be good.
