
Our sweet son, Spencer, is home for the summer! Wow it feels good to have everybody back in the nest. He just loves this Mexican Casserole that I've been making for years. Thought I'd share it with you.
This was passed to me so many years ago that I'm not even sure who gave it to me. It's copied from a book and says Mrs. John Taylor (Sue). So Mrs. Taylor, where ever you are...Thanks!!
Mexican Casserole
1 Tbsp. oil
1/2 cup onion, chopped
2 cloves garlic, minced
1 lb. lean ground beef
1 28 oz. can stewed tomatoes
1 pkg. taco seasoning
1 4 oz. can diced green chilies
1 2 1/2 oz. can chopped black olives
15-16 oz. crunched up Nacho Doritos
1/2 lb. mozzarella cheese, shredded
1 pt. sour cream
1/2 cup cheddar cheese, shredded
Preheat oven to 350 degrees. Heat oil in large pan over medium heat. Add onion and garlic and saute until translucent. Brown the ground beef breaking it up as you go. Blend in tomatoes, taco seasoning, chilies, and olives and simmer about 10 minutes.
Grease 9x13" baking dish. Layer 1/2 of the chips over bottom of dish. Add all of meat mixture then mozzarella and sour cream. Top with remaining chips. Bake until heated through about 30 minutes. Sprinkle with cheddar cheese and continue baking until cheese melts. Let stand 5 minutes before serving.

Oh, child...this sounds wonderful. Out here in West Texas, we use corn or flour tortillas..never thought to use chips...Will be trying this one, for sure! Thanks..

I've decided I just have to do a bit more cooking, so I shall reference this one. I like casseroles. Usually plenty of leftovers to reheat! Although at your house with males that probably isn't the case!

That is very similiar to one I do..but I layer it with tortilla shells..YOU have me hungry now....yum. Your son is a cutie pie! So glad you all are back together for the Summer...I don't know what I will do when mine goes off..he is 11 but seems like just yesterday he was 5. I got my jute upholstery ribbon at good ole Walmart...check there notions next time...cherry
