Now I'm talking mostly about food here. You just have to know that we are a family that loves to eat! We like good food. Preferably homemade! We gather with our friends constantly and it's all about food. We love hamburgers, potato salad with lots of mayonnaise, ice cream, etc.
We do all try to watch our waistlines though and that's where the trouble is right now.
I start my day off in a pretty healthy way almost every day. Love my Raisin Bran! I know it's a little like gerbil food but I love it.
It's so easy to be smug at 8:30 in the morning and think you are good, Right? Then lunch comes and what's a sandwich without a big pile of chips? And don't forget the Diet Coke!
Here's where the downfall really comes at our house. Dessert!
I'm telling ya I want dessert every day! It's true. We don't save up our calories and eat something special on the weekend. No sirree Bob! We have dessert daily.
In the last couple of weeks I can remember Spencer's cake, another birthday cake, a Sonic milkshake, a peach cobbler, and pie!
So it's time for this girl to get the good habits back in the lead. Carolyn, if you are reading this, I have my walking shoes on!
Just let me finish off this French Silk Pie with whipping cream on top. Shh!
2 (1 ounce) squares unsweetened chocolate
1/2 cup butter, softened
3/4 cup sugar
1 (4 ounce) container of Cool Whip
1 baked 9 inch pastry shell
3/4 cup whipping cream
2 tablespoons powdered sugar
Shaved chocolate (optional)
Melt chocolate squares. Cream butter; gradually add sugar, beating at medium speed of an electric mixer until light and fluffy. Stir in chocolate. Add eggs, one at a time, beating 5 minutes after each addition. Fold in whipped topping, and spoon mixture into pastry shell. Chill 2 hours.
Beat whipping cream until foamy; gradually add powdered sugar, beating until soft peaks form. Spread whipped cream on pie; garnish with shaved chocolate.
